Baltimore Soup Company Coming to Downtown’s Charles Plaza Food Court

Baltimore Soup Company will be launching its first location at the Charles Plaza Food Court at 222 N. Charles St. Downtown. It is leasing a 500 sq. ft. space for its operation.

Baltimore Soup Company is the creation of husband and wife team David and Lisa Redmond. After 30 years in the golf industry, David joined his wife in the culinary industry in 2002 when they launched Café Gourmet in Towson. The fast-casual restaurant, which focused on sandwiches, soups and salads, quickly grew to six locations around Baltimore and one in Philadelphia. They eventually sold the locations to operators but still run one location at the UM BioPark in Hollins Market. They opened similar restaurants around the region and still own Fresh Farms Café in Lancaster, PA.

David told, The BMore Stoop’s sister outlet, that Baltimore Soup Company is a “fine-tuning” of all the fast casual cafés and restaurants they have opened. “We found that no matter the time of year, soup was our number one item,” he said. David credited this to Lisa, the chef, and her 200-plus soup recipes, as well as the fact that the soups are always made fresh. They have a commissary in Timonium where the soups and other items are made each day.

David compared Baltimore Soup Company to a local version of Panera Bread with freshly-prepared, never frozen foods. They will have six to eight soups available every day, all of which come with bread or which can be served in a bread bowl. They will also have six to eight types of sandwiches and salads, as well as other prepared meals, espressos, coffees, and specialty drinks.

Maryland Crab Soup will always be on the menu using Lisa’s grandmother’s recipe. Other popular rotations will include Chicken Pot Pie, Tomato Basil Bisque, Loaded Baked Potato, Cream of Tomato with Chicken and Orzo, and others. Their sandwiches include freshly-cooked meats, local veggies, and homemade spreads. There will be a focus on chicken and turkey sandwiches with additional options available. Their breads will be made at different bakeries in the region including Baltimore’s American Hearth. Salads will include the same fresh ingredients and house dressings. Soup, salad, and sandwich combos will be available.

The location is expected to open this fall. Baltimore Soup Company is also opening a 2,000 sq. ft. location at 2 East Wells in South Baltimore which is expected to open in early 2017. It additionally signed a lease to open a location in Timonium.

The Redmonds will focus on these three locations before planning any future growth.
